Who else is a coconut fan? If you are thinking “meee” now, then this is definitely a recipe for you. It’s a dreamy creamy coconut
porridge with grated pear, perfect for a cold autumn or winter morning to get yourself warm and ready for the day. I hope you like it as much as I do!
1/3 cup of oats
1 cup of warm water
1 tablespoon of coconut mousse (e.g. from Essential Foods)
1/2 a pear
1 pinch of vanilla powder
Put oats in a saucepan.
Put coconut mousse in a cup and fill up with hot water. Stir well.
Add this coconut water to the saucepan and bring to boil, then keep to a simmer.
Meanwhile, grate pear or cut into tiny pieces. Add to the saucepan and cook with oats.
Add some vanilla powder and stir well.
Once your porridge is creamy, transfer to a bowl and top with whatever you like (e.g. chia jam, nuts, etc.).
